Why Do Ruthob Dates Need Special Handling?

Unlike dried dates (tamr) that keep well at room temperature, ruthob dates (wet/fresh dates) have high moisture. That is what makes them soft and delicious, but also prone to fermentation, mould, and spoilage if stored wrongly. Understanding how to store ruthob is the key to ensuring your investment isn't wasted and its freshness is preserved.

Three Storage Options

1. Room Temperature (Very Short Term)

Ruthob lasts only briefly at room temperature, especially in a hot, humid climate like Greater Jakarta. Keep it at room temperature only if you'll eat it within hours to a day, and away from direct sunlight.

2. Chiller / Fridge (Short Term)

For eating within 1–2 weeks, store ruthob in the chiller in an airtight container. Cold slows fermentation and preserves texture. Make sure the container is sealed so the ruthob doesn't absorb odours from other foods.

3. Freezer (Long Term)

This is the best way to store ruthob for a long time. Frozen dates can keep for several months — even up to around a year — without significant quality loss. The freezer is the heart of professional ruthob handling.

Steps to Freeze It

  1. Separate the pieces before freezing so you can take what you need.
  2. Use freezer-grade airtight containers/bags to prevent freezer burn.
  3. Press out excess air from the packaging before sealing.
  4. Label the date so you know when to use it by.
  5. Keep the freezer temperature stable and avoid frequent opening.

How to Thaw Correctly

Ruthob's texture hardens after freezing. To restore its softness:

  • Move it to the chiller overnight, or let it thaw at room temperature.
  • For a quick method, soak the ruthob (still in its packaging) in a bowl of warm water.
  • Once thawed, the taste and texture return close to the original, pre-freezing state.
